Father's Day Cup Cakes

The cupcakes were an adventure.  It's just a basic yellow cake (basic = from the box)!  David wanted strawberry filling and a boston cream topping.  I was having a hard time figuring out how I was going to do the boston cream, let alone make it work as a topping.  And I have to say, I didn't even try.  It was a rough day trying to get some things done around the house and figure out how to do this.  The filling was a complete success though!

I took strawberry jam and mixed it with powdered sugar and a little water.  It was PERFECT!

I was pretty disappointed with my icing.  I've done chocolate icing and cream cheese icing but never just butter cream icing.  It was a bit too sweet and too thick, I tried to get red icing but completely FAILED!  I ended up with PINK icing, worst color icing to have for a father's day cupcake.  My mom added some blue and made this really pretty purple.  Still not great for father's day but it was a bit better than PINK.

Hubby appreciated my effort though!
